Students will take on 4 different identities, such as slave, immigrant, domestic servant, factoryworker, merchant, soldier, etc., and create 4 typed journal entries (>500 single-spaced words each entry), that capture the unique experiences of such a person, with meals being a focal point. Journals will be assessed to determine if students have an accurate understanding of the factors that impacted mealtime for persons in the US who were enslaved, emigrated, migrated, or employed during the industrialization period just to name a few examples. Research should go beyond the textbook and class material. Utilize and cite a minimum of 5 sources. Use APA format on the bibliography page. Total word count is 2000, single-spaced, TNR, 12 font.
